Easy One Pot Mexican Rice with Black Beans and Corn (Vegan)


A quick, simple and delicious recipe, this Easy One Pot Mexican Rice with Black Beans and Corn is wonderful as a main course in its own right or as a side dish to all your Mexican favourites. It’s gluten free, dairy free and vegan.

Ingredients
∙ Makes 4

1 400 g tin Black beans
1/2 tsp Chilli flakes
1 Chillies, Fresh
2 tbsp Coriander, fresh
1 Coriander, fresh
100 g Corn
3 Garlic cloves
1 Green or yellow (bell) pepper, red
1 Mexican roasted corn, on the Cob
1 Mexican roasted sweet potato cubes
1 Onion
1 Spring onions
Condiments
1 Guacamole, Chunky
Pasta & Grains
300 g Basmati or long grain rice
Baking & Spices
3 tsp Paprika, smoked
1 Salt and pepper
Nuts & Seeds
1 tsp Cumin
Liquids
350 ml Water
Other
350 ml Passata ((or 400g/14oz tin chopped tomatoes))
